Sweet potato is like pumpkin. It is rich in Vitamin C, but most of all it is rich in beta carotene. Our body converts beta carotene into Vitamin A. The good thing about beta carotene is that it our body only converts the Vitamin A that it needs, making it better to eat foods rich in beta carotene than to take Vitamin A supplements because it is possible to overdose on Vitamin A. This Thanksgiving you might want to use sweet potatoes for your French fries. Just cut them into the same size as you would your potatoes, sprinkle with salt and pepper and deep fry.
